That looks like your environment is simply not getting set properly-- or is getting reset after your /etc/profile is set (you might check for a ~/.bashrc or ~/.cshrc, depending on your shell).
It may take some digging to find, but somewhere in your profile scripts, it is setting CATALINA_HOME to that.
