How do I get Spamassassin configured with Postfix to have the email
checked there FIRST before running it through Postgrey?

not mentioning his attitude, hit point was correct.
Why should you check mail with spamassassin and then greylist it?
it could come again and you would scan it again.
the logic says that the cheaper measures should go first, so your mail
server doesn't repeatedly spend cpu and network to expensive things like SA.
greylist can delay mail with very small overhead, and the whold point of
greylisting is to avoid receiving some of the mail from end machines.
that will spare you from running SA.
if you run SA, there's no point in running greylisting anymore.
