I got information about the mail flows (from the technician managing the 
BlackBerry phones):

Message
--> Send from an account on our server ---> to a mailbox at O2
(cell phone provider) ---> and from there directly to the phone

What
I not understand is why messages are checked for spam overall ? My
assumption is that SpamAssassin checks only INCOMING mails, but not the
outgoing ones. Strange.

By the way, we are using a combination
of Postfix/Cyrus/amavisd-new/SpamAssassin to handle mails (on a Mac OS
X Server 10.4.x). Maybe you have an idea where to start checking and
what.

The problem is that I cannot get hands on a mail header
for thorough investigation, because when the mail arrives the phone, it
doesn't provide access to the entire mail header. And the O2 mailbox...
I don't know. Seems that this is just used as transit mailbox without a
way to access it. So I need to guess a bit.
