Like what was said, you should do that in what calls SpamAssassin, procmail, 
maildrop, amavis, or whatever.

However, you can whitelist an address in SA too, that is 

    whitelist_from [EMAIL PROTECTED]

in your local.cf or user_prefs

In the latter case, SA still scans the message, causing resource usage. But it 
will not be marked as spam, propably.
