If you word the note appropriately there would be no need to change it again. Something along the lines of "Also note that, like all such settings, the default values can be overridden by configuration files including those downloaded using sa-update. For example, the official sa-update channel for SpamAssassin 3.2.0 included a nonspam threshold setting of 1.0 on <insert date here>; this setting could of course be changed again with a subsequent update."
