How you upgrade depends on how you installed in the first place. CPAN? Source?
rpm? Other package?

If you installed from source, you just install the new version from source on
top of it. SA will automatically delete /usr/share/spamassassin/*.cf and
re-install new ones. It will leave your custom site-config in
/etc/mail/spamassassin alone.

As for doing it mid-day and live, no.. I would not do that. I would also
extensively review the UPGRADE file that comes with SA before doing so. Some
configuration options have changed between 3.0.2 and 3.1.x.
