you should not discard mail "frivolously" (false positives occur). use a quarantine mechanism instead (a Junk folder for instance. then you can quickly view the spams there...). Anyway, with postfix, use header_checks. see postfix docs. If you don't do per user Bayes, then amavisd-new is the recommended way to integrate SA in postfix.
