See the docs for the autolearner: http://spamassassin.apache.org/full/3.1.x/dist/doc/Mail_SpamAssassin_Plugin_AutoLearnThreshold.html and see the bayes_auto_learn_threshold_nonspam option. (That's assuming you did not disable the loadplugin Mail::SpamAssassin::Plugin::AutoLearnThreshold in your v310.pre, otherwise you'll have to turn it back on first. )
