Which whitelist system do you mean? The one that generates USER_IN_WHITELIST_* 
(static), or AWL (the auto-whitelist).

For the AWL, which is a database, see man spamassassin. Look at the command line 
parameter --remove-addr-from-whitelist and it's cousins.


For static whitelists, you'll need to edit your configfiles and remove the 
whitelist_from, whitelist_to, or related entry.
