It's an optional feature declared in the _default solrconfig.xml that only
applies when using the "add-unknown-fields-to-the-schema" update processor
chain...

Look for this class name in your solrconfig.xml...

..by default it has 'name="max-fields"'

You can either:

 - change it's config as you see fit
 - remove it's name from the update processor chain you use
 - change the update chain you use to something else
