It turns out that this was my problem: I was using the wrong apache setup. Once I changed this to match the stock SOGo.conf settings everything worked fine on iPhone (iOS5.x). Also, the OPTIONS 401 I kept seeing in the logs -- I still get these, and turning on the extra logging simply shows that anonymous access fails first but the next try using authentication succeeds.
