Thank you Nancy, David, Robert,

It's a new day, and I was so tired last night.

I followed the directions in:
https://smallbusiness.chron.com/add-background-image-openoffice-document-63567.html

But I also changed in View > Print Layout or Web Layout. Web Layout has the
margins way outside and Print Layout doesn't.

I made yet another draft of the letter, saved as, and opened a new copy.
Changed from Print Layout to Web Layout, got my margins back, and followed
steps 1-4

https://smallbusiness.chron.com/add-background-image-openoffice-document-63567.html
Says:

4.

Click the “Browse” button, select your background image and click the
“Open” button.

[I get a preview of the image which isn't complete]

5. Select a graphic option in the “Type” section. The “Position” option
allows you to select a page position for the image, while the “Tile” option
will repeat the image throughout the page.

[The choices are 1. Position 2. Area 3. Tile. I don't remember clicking
'tile', maybe the cat did it... I changed it to 'area']

6. Click the “OK” button when you’re satisfied with the way your new
background image looks.

Now, I have a letter, on a beautiful background which has it's own gold
frame, on a page, with white margins all the way around!

It's closer, but still no banana.

I haven't ever used 'styles'. I'm very unfamiliar with the processes they
use. The final message in this thread does appear to accomplish my goal.

Thank you for your ongoing support as I learn more about Apache Open Office.
