That's what you should expect: copied material carries with it some formatting characteristics and these are respected by default in the pasting process. If you paste 10-point text, that is what you will get.

I've checked the Tools / options / font and even set up what appears to be a replacement table to replace Times New Roman with Arial. In spite of setting this up, when I paste the data, it remains Times new Roman. I have to manually change it to Arial 14. I'd like whatever data I paste into the cells to remain Arial 14 - preferably centered in the cell. Is this possible?

Yes: you are just looking in the wrong place. This is not something that you set up once for all paste operations but choose each time you do so.

o Instead of using normal Paste, go to Edit | Paste Special... (or right-click | Paste Special... or Ctrl+Shift+V). That's just as easy.
o In the Paste Special dialogue, select "Unformatted text".
o The default options in the Text Import dialogue may well be satisfactory, but you may wish to experiment with the options there. For example, "Detect special numbers" may be helpful in getting dates and currency amounts pasted as such and not as text.
