In addition to filtering out, watching some topics specifically, coloring, threading by topic or not, searching, and other manipulations one can do to incoming and received emails (as well as dropping!), a major point to me is also that with email, we can get the whole conversations offline (at least what you received since you subscribed), even writing can be done offline (send later), whereas it's not that easy with web content.
