I poked around a bit and it looks like this behavior is intentional: 

https://gitlab.gnome.org/GNOME/gvfs/-/issues/497#note_875764

Basically, a flag is added to MTP GVFS mounts to prevent nautilus from 
attempting to create thumbnails, due to slow performance of those types of 
mount points. 

There’s a link to an even older issue (that predated the move to gitlab) so 
it’s been that way for a while.
