1. Save messages to DB It's depends on how you use your kannel. First of all, if you user sms-services with 'get-url' param, you can easly save received/incoming messages to DB by your self (your script), before send outbound message (answer) Or you can use a special addon for kannel, called sqlbox.
2. What do you mean, "connect to different providers"? Several connections to smsc? Just add to conf file some smsc groups. Or, if you want to provide some services for someone, according to anything params (such as shortcode, incoming text and etc) - you need to create mor different groups sms-services in your conf Plz, more information about you problems.
