Hi,

I don't think your problem is related to UML, but to the way you created your Debian filesystem.

Maybe you can try to localy mount you filesystem (mount -o loop), then chroot inside and execute a "passwd -d root" command. It will empty the root password. Unmount the FS, start UML again and you should be able to login as root without password.
