I'm not entirely sure what your exact problem is, but I've had some bug with
disappearing menus a while ago. You could try to install "Alacarte" (sudo apt
install alacarte) from the official repositories and click on the "Restore
System Configuration" button in the lower right of the program window. That
*should* restore the categories.
