I found Dasher, which is part of the Gnome Desktop. It installs by
default in Ubuntu 8.04 and can be found under
System>Preferences>Assistive Technologies. Dasher offers good potential
for people with motion disabilities. So disregard my previous post
please. I probably should have posed my question on Ubuntu Forums in the
first place.

For the rest of you looking for alternative text entry methods, Dasher
actually looks much more promising than any voice recognition software
I've tried before under another nameless OS.
