Shift detection on UEFI doesn't work on any UEFI platform unfortunately, as the input API cannot detect modifiers on their own.
Escape does work on UEFI platforms, perhaps not Apple for some reason. Keep in mind that we do have boot failure recording, so the GRUB menu does show when it is really necessary.
