I've rebooted to try it again with bluetooth off and ... surprise!
Everything worked! I'm heavilly using the network, and, so far, no
restarts.

Maybe they changed something on network-manager that solved the issue
for me, or maybe it was because I've updated the firmware on my Wifi
router.

I encourage trying to connect with others hotspots (before updating the
firmware, the Dlink I was using was terribly buggy, maybe it made the
network manager crash ...)
