Sorry, I missed to take into account your ubuntu release, you are right: nvidia-current contains the 260 drivers only in the maverick package, on lucid it is still on 195. You could use the ppa of xorg-edgers, they provide a 260 version for lucid.
The automatic disabling of the nouveau driver (an open source driver for nvidia cards) is on purpose. You have to decide whether you want to use the opensource nouveau driver, or the proprietary nvidia driver.
