I use XViDCap for screen casting.  If I try to record sound with it, the sound 
won't record, despite having selected my microphone. 
Kega Fusion (a SEGA emulator) will not work properly with its sound enabled, it 
just goes weird, but works better if I close all other programs, but it still 
doesn't work smoothly with sound unless I'm using the Windows version in 
Windows (and not Ubuntu).
I'm sure there are other programs that don't work properly with sound.  I don't 
know the the technical reasons behind all this, but I know there's a bug 
somewhere.

The wine bug is quite common, the sound system used by Ubuntu is
PulseAudio (on top of alsa) and Wine developers did not use this sound
backend for their project. i'm afraid there is not complete fix for this
at the moment but there are a few workarounds.

For your screencasting problem, you should write a new bug report
specific to your program. Which screencasting software do you use ?

Bug description:
These sound bugs are weird, let's start by saying: I *can* record with my 
microphone and I *can* play sounds, but....

I cannot record sounds from screen casting programs.

Despite making my USB microphone the default (model: AK5370), the Sound
Preferences default to the "Internal Audio Analog Stereo".

Some programs e.g. Wine, Kega Fusion etc. don't play sound, unless I
close all other multimedia programs and run only that one program alone.

I've been told these problems are caused by something called ALSA.  Is
it ALSA or Ubuntu that's got these sound glitches?
