Looks like things somehow got really screwed.

When in doubt, just edit the /var/qmail/users/assign file, and virtualdomains and rcpthosts accordingly. Then run /var/qmail/bin/qmail-newu to update the cdb file. You'll also want to hup qmail-send. That should set things up manually to how you want them.
