Hi @TiddlyTweeter, we're working on making ANY API-supported language work.
We could imagine adding a tiddler $:/config/speech-to-text/language and 
users can set the text of that tiddler to en-US, de-DE or whatever they like

Some news from the front:
users can now define their own keywords, which means that they can add 
words to "Ok" and "Wiki" using a config tiddler - like "Pasta" for "Ok" and 
"Maccheroni" for "Wiki" ... then you can trigger the listening for commands 
using "Pasta Maccheroni"
users can now define their own actions triggered by voice-commands. See the
