To answer my own question, in case any one else finds this useful, we have tested the 6,1 MacPro with a Promise Sanlink2 Thunderbolt/FC adapter which shows up under ESX 5.5 as an "Emulex Corporation Emulex LightPulse LPe16000 PCIe Fibre Channel Adapter" which is on the VMware support list.
