Depends on what you want to accomplish. We've had very good luck running ESXi 
as a server to host guests. Main pain there is that you need a Windoze box to 
run the Vsphere client to manage the server. Some things can be done via ssh 
console once you turn it on.

VitrualBox is fantastic as a desktop VM host for experimenting, etc.

As others have mentioned, Xen and KVM are also out there, but I have no 
experience with them.
