As this is a Talks and as I am a dedicated Talks user, I have to comment that 
the comments below are a good sell away from Talks. Now come on Talks 
developers don't let us dedicated users of Talks move away from Symbian and 
Talks. I have Belle on E6 and hope for further advancement in using that phone. 
There is the N8 which is a total touch screen running Symbian and Talks. We 
used to have Allan on this list who used that phone.

Yeh, blind people have used the iPhone, which only has a touch screen,
as well as touch screen only phones with Android and Symbian.

I myself now have an iPhone, and it's definitely usable by a totally
blind person. You're running VoiceOver and you can navigate each screen
by swiping or just moving your finger around on the screen. VoiceOver
tells you what object has the focus without activating it. You activate
an object by double tapping on the screen.

There are a few different typing options, but you're basically using a
on screen keyboard. I find it a bit similar to using a tiny little
querty keyboard. You don't have the tactile feel of the keyboard, but
you learn roughly where the keys are on the on screen keyboard and
VoiceOver let's you know what key you're on. You can also attach a
bluetooth keyboard if you want.

There are a lot of other gestures to use on the iPhone, and there's a
lot of good resources on the web and via mailing lists to learn about
how to use the iPhone and which apps are accessible with VoiceOver. You
could also stop by an Apple store, or one of the carriers that carries
the iPhone, and play with it for a while. It does take some getting used
to though, so you may want to spend more than a few minutes with it in
the store before you decide if it's right for you or not.

My only experience with a touch screen phone is the iPhone. Others can
probably weigh in on their experiences with other touch screen phones.
