I guess that my protest was caused by being aware only about pasta secca (dried)

I guess that you can argue that fresh pasta is subtype of dumpling 
( https://en.wikipedia.org/wiki/Dumpling ) or that dumplings are subtype of 
fresh pasta.

 as shop=pasta seems alien to me and I would prefer something else
And https://en.wikipedia.org/wiki/Noodle seems something separate.

my tagging ideas for place selling pierogi almost ready to eat but 
requiring further cooking, sold fresh - not frozen:

shop=food food=pierogi
shop=food food=prepared_meal cuisine=pierogi
shop=food food=prepared_meal prepared_meal=pierogishop=food 
prepared_meal=pierogi
shop=food main_food=pierogi
shop=prepared_meal prepared_meal=pierogi

or if I would hate data consumers

shop=pierogi

but this way you will get endless shop values for various food,
as there is basically endless variety of shops selling some highly
specific food type. Just from Poland you would get
shop=oscypek (special type of cheese)
shop=obwarzanek (special type of bread snack)
shop=śliwowica (some plum-related alcohol)
shop=smoked_mackerel (specific method of preparing specific fish)
and so on

(I would tag them with more generic fitting value and add this info as
additional tag, say shop=cheese cheese=oscypek )
