I'm looking to do something similar, right now I'm using SAproxy for windows, is there a way to setup Spam Assassin on my linux box to proxy my mail checks like SAproxy does? As I'd like to have a little more control of what happens and integrate a few other things such as Vipul Razor etc...

I just wanted to suggest skipping the MTA. Fetchmail can hand off directly to procmail, which (to my knowledge) does not need to be integrated into an MTA at all.
