SpamAssassin isn't set up to send such messages, so it's postfix or something else doing the bouncing. I unfortunately don't know Postfix, however there is where the problem is, not with SA. If no one here can assist, I'd take a look at your postfix configuration, failing that, I'm sure there's a postfix group out there. I'm sure though somewhere in your postfix configuration is a setting saying "Hey, if this is spam, bounce it".
