Can't comment on MIMEDefang vs amavisd-new but conventional wisdom is
that Sendmail is much trickier to manage and should be avoided unless
you already are locked in, as it were, with Sendmail.

I'm not a mail administrator -- if you can afford one and she likes
Sendmail, by all means listen to her.

It's not like Postfix and Sendmail are the only two alternatives. In
particular, Qmail and Exim are quite popular, and Courier tends to get
mentioned as a commercial alternative.
