Can't comment on MIMEDefang vs amavisd-new but conventional wisdom is that Sendmail is much trickier to manage and should be avoided unless you already are locked in, as it were, with Sendmail. I'm not a mail administrator -- if you can afford one and she likes Sendmail, by all means listen to her. It's not like Postfix and Sendmail are the only two alternatives.
