We do this as a service for some clients. Depending on size of your exchange it's many times free othe than $100 setup/config fee.
As to deleting - we actually bounce all rejected spam so if a sender is real they will know your user didn't get it. We also recommend you firewall or restrict ip access to your exchange server so spammers aren't wasting resources on rejecting mails you won't relay.
