Is it possible to write in log the IP of the source server and not 127.0.0.1?

I use qmail->qmail-scanner ->spamd (spamassassin)

Thanks

No. Spamd is showing the host that is connecting to it, and in your case, that'd be the localhost address. The remote server doesn't connect to spamd at all, so there's no way you'll get spamd to say it did.
