I don't know if I qualify as "expert," but I did start off using a shell
script and switched to invoking procmail directly because if one of the
processes launched by the shell hangs (which did happen to me, when razor1
was still in use and the razor server was down), there's no way that I know
of for the parent shell to realize this and just dump the mail back out
unfiltered.

With procmail, as long as you set a timeout shorter than Postfix's child
process timeout, you should be safe.

It is a bit on the esoteric side, but once you are familiar with it (and
have carefully read the man pages many times) it becomes pretty simple.
