Yes. Sendmail is probably using procmail for delivery, which means you can set up a global procmailrc file to feed the email through Spamassassin and then filter on the tags installed by Spamassassin. > 2 If I need to alter the sendmail configuration to install Spam > Assassin as above in question 1 - how difficult/easy is it. Configuring sendmail has a bit of a learning curve to it. If you were going to go to that extent, you might want to go further and install postfix or another modern MTA.
