If you run spamd, it usually writes information to the logs. You can
parse the logs and gather statistics and numbers.

http://www.gryzor.com/tools/#spamstats is one example of a script
that parses the log information.

Same applies to other solutions such mimedefang + spamassassin - the
script mentioned above probably won't work but perhaps there's others
(graphdefang exists for mimedefang), or you could always write your
own.
