Firstly, you're using MIMEDefang, so SpamAssassin isn't allowed (by MD) to alter any mail (including headers) ..
so, you need to check your code in your mimedefang-filter and make sure you're setting the headers appropriately.

This might be a better question for the MIMEDefang list.

also, you're using a (now) old version of MIMEDefang. the latest release is 2.35. you can check www.mimedefang.org for more information and some filter examples (if i'm not mistaken)
