If we were to try to do an intelligent auto-responder as you suggest, it would need to know what you meant by test-viagra, test-enlarge, test-invest, test-debt, test-copydvd, test-degree, test-prescript, test-porn, test-cable, test-diet, and any other topic we get spam in. That in itself could be a major programming task. The downside would be that it wouldn't be as fast as an auto-responder, but the upside would be a bit more variety in what you receive.
