There's no source package just yet, but you can check out the
individual files via anonymous CVS from the SpamAssassin CVS
repository.  If you're using pop3proxy.pl, you can probably get away
with replacing just that file.

I'll let you look up the details on how to access CVS anonymously, but
you can at least browse the repository from here:

It's "official", it's just "old".  :-)

That site still has the 1.0 release.  Since then we've added a few
things, most notably a binary build that doesn't require you to
install Perl on your Win32 box, and a nice GUI that puts the proxy in
the systray.

That version of the proxy reads the user_prefs file in the same
directory as the proxy itself (e.g. C:\pop3proxy\user_prefs).

Newer versions have a more complete search mechanism for the
user_prefs file - see the POD documentation in pop3proxy.pl if you
download it from CVS and go that route. 

Once you get the right file, rewriting headers is a function of
whichever version of SpamAssassin you use with the proxy - see the
appropriate SA docs.
