Ick; cc: or bcc: back to oneself is merely an ugly kludge (as compared to an elegant kludge, not unlike what I'm about to propose :-) The fabulous MUA mutt lets you specify how you want to hand your message to sendmail (or whatever you're using), and it would be trivially simple to make that call a wrapper which peels a copy off for spamassassin (perhaps first pulling only the To: and Cc: headers, as you specify above, unless SA has a flag that does that for you) and also hands it to your real MTA program.
