The problem with that of course is that real spam almost never has real headers so you tie up your mail server with attempts to mail to undeliverable addresses and perhaps annoy real people who are unfortunate enough to have an email address that a spammer made up for their fake header. That said, if you really want to reply with a bounce message, see the procmail recipes at http://spambouncer.org for an example.
