Forgot to add: the only reason he stays in business is that he has a dominant Japanese customer base who pay good money to have the food. In his words, "we're like the unofficial Japanese cultural centre here in Bangalore." The food costs about Rs. 1500 per head on average to eat well. If he had to depend on Indian customers alone, I wager he would have shut shop quite a while back.
