Analytics: stick with google analytics. Make sure all pages on your site have the simple tracking code. Use the ga.jas version (you get the code presented wen you create a profile). We're (my company, Internetrix) one of their handful of partners in Australia, and we'll be running some training courses in the new year if you want to become more proficient in understanding its 250+ built in reports.
The cool stuff with real time chat is Woopra. I believe they're still in private beta. We use SecurePay for a payment gateway for clients so users don't get dumped over to Paypal. Paypal does support a payment gateway in north america and the UK, but they don't offer it here (called PayFlowPro). If you run your own payments, you'll need SSL & some server side code to interface with the gateway. Paypal is ok, but I think the biggest shock and dropout for shoppers comes when they are dumped off your site onto a generic paypal payment page. Think about customising this via PayPal setup are, you can add your logo and make some color changes I believe. Also on the page you have the buy now button (ie the page before the Paypal payment page) put a PayPal logo and a statement that all your payments are handled by Paypal and you will be transferred to them to complete payment. Just so there is no surprises when they get pushed to the page. Hope this helps.
