Do you need to know the number of words in your document?
My interface is in spanish language, so I am not sure about the exact words,
but please search:
Menu File > Properties > Statistics

use normal text, just change to Default style.
You can easily change paragraph style using the selector in the upper-left part
of openoffice window.
Using styles you won't have problem to use notes at the end of the page.

When you type text in a Calc cell, it tries to autocomplete cell content with
the content of any cell in column that starts with the same text. Is it
possible to disable that behavior? I couldn't find that option. Thanks in

I'm using spanish interface so maybe translation to english is not exact.
Go to "Tools" > "Options" > "Load /Save" > "General"
Under "Always save as" select the format you prefer.
