Does anyone know of a filesystem that includes a GUI? I've had a look

Just wondering if anyone has any experience of build OS filesystems on
Ubuntu. I've downloaded the UMLBuilder application but it's only available
as an RPM.
Would you recommend using a pre-created FS and just modifying it for my own
needs?
