That does look like a good idea.
The question is whether or not it is possible in unity itself or would it
have to be done through the individual applications?

isn't the only position where the WindowTitle should be placed. Why is

As it is a launcher, I would expect it to show the name of the application
regardless.
The name of the document/pdf etc should be displayed in the menubar/panel.
