I forgot to mention that this fresh install of Gutsy also included
installing Grub manually at install time and Grub works fine... I
followed this guide:

Fresh install of Gutsy using a FakeRaid array set (ICH9R chipset) using
FakeRaid HowTo. First few boots correctly shows RAID partitions in
/dev/mapper/. but suddenly after restarting the PC one time, the
RAID partitions are not present in /dev/mapper
