If you're just doing simple cut-and-paste editing (ie: not generating new multichannel data using multichannel panning etc), you could just work in multiple mono tracks and then use something like Scott Wilson's free little De-Interleaver app to pull apart and put together multichannel files.

Hi, I believe you can set up a 7:1 surround sound project and work on 8 channel sounds files in that. Should work as long as you are just doing simple mixing and are careful about what effects and plugins you apply. But once working on non-standard multichannel configurations and using surround
