I'm bidding a commercial rooftop of about 200KW using string inverters. The
voltage is 208V 3Ph 60Hz, and I can't find an inverter over 15KW. I was
hoping to use the SMA 50KW CORE 1 but everything is 480V. Any leads on a
reputable inverter?

We got caught once by this, the storage inverter was doing strange stuff,
tripping breakers, etc.
When I realized it was 120/208, we changed to a storage inverternwhich was
specified for the arrangement and never had another issue.
It's not just the voltage, the included angle between the cycles is
connections.
Use a torque wrench and crows foot wrenches.
Also you will need a vacuum pump to vacuum the lines. A lot of installers
don't and it will kill the compressor over time.
